Fortified Duck

A co-fermented blend of Shiraz and Tempranillo from our Adairs Lane Vineyard.

Fortified Duck is a very small volume wine, made for the pure enjoyment of fortified wine. It is a blend of Shiraz and Tempranillo, co-fermented in two small open fermenters. When the appropriate sugar levels have been reached, fortification of the wine occurs by mixing in the oldest Brandy available to us in with the fermenting grapes. Fortification stops the fermentation process, locks in the sugar and stabilises the wine. After 5 to 7 days, the grapes are then pressed into old oak barrels where it is matured for up to 14 months. Bottled in both 375mL and 700mL bottles.

Tasting Notes

Very dark red. This wine is a combination of Shiraz (50%) and Tempranillo (50%) grown at our cooler southern Mia Mia vineyard. These two varieties are destemmed, then co-fermented to interweave aromas and flavours, then fortified using 24yo brandy. It is then left on skins for 5 days to intensify textures. We were so excited when pressing this wine, as the smell of blueberry ice cream leapt from the glass. It was then matured in old oak barriques for 12 months. The nose is intense. Filled with blueberries, spice, anise and violets. It’s has an old-world charm about it. The palate is rich and silky. Layers of blue and red fruits, dark chocolate and liquorice coat your palate. The sweetness wraps you up in a warm blanket, and the soft yet abundant tannins leave your mouth watering and begging for more. Drink now or cellar for decades! 18.5% Vol, 900 bottles produced.
